September 7th 2010, will be a day that I will always remember.
My life changed that day. At 1:30 pm about one year ago, I heard those four words…you have prostate cancer. I guess my life actually changed before the 7th. It was on August 25th that I had my biopsy at the Princess Margaret Hospital.
It was not a pleasant experience.

The four words “You have prostate cancer” are shocking.
I heard those words over a year ago and it has taken me this long to feel comfortable writing about this journey. When most men hear those four words they rush to eradicate cancer from their bodies. They want surgery or some other form of treatment. They pray they’ll be one of the lucky ones who does not experience erectile dysfunction or incontinence. I have chosen a path of active surveillance and hope I will never have to have anything more invasive.

According to Wikepedia a quiche is defined as follows:
A quiche is an oven-baked dish made with eggs and milk or cream in a pastry crust. Usually, the pastry shell is blind-baked before the other ingredients are added. Other ingredients such as cooked chopped meat, vegetables, or cheese are often added to the egg mixture before the quiche is baked. Quiche is generally an open pie (i.e. it does not include a pastry covering), but may include an arrangement of tomato slices or pastry off-cuts for a decorative finish. Quiche may be eaten for breakfast, lunch, or dinner, depending on local customs and personal tastes.
Some of you just weren’t buying my last attempt at a quiche- or what I was calling a quin-iche which was really quinoa mixed with some egg and cooked veggies and baked in a muffin cup. Whatever to all you hatas!!!
But you got me thinking. And you got me thinking as to why I was so resistant to the idea of a real quiche (as defined above). Now lets leave out the cream and cooked meat bits for a moment and I will tell you a brief story with a diarrhea ending.
As many of you know, I have never really taken cooking lessons before I started teaching them (Don’t tell my Marilyn Denis producer that okay?) I took about 12 hours of cooking classes while in nutrition school- but that was more along the lines of making beet kvas and how to sprout rye to run it through a meat grinder to bake into sprouted buns on a ceramic tile that faced the north with the wind blowing from the south and to be eaten while balancing on one foot staring at the sun. Basically- we learned very traditional cooking but that still didn’t help me to know what I should eat for breakfast.

A few weeks ago, we posed the question on Twitter asking what everyone’s fave comfort food was that they wish could be healthified. Later that week, I had the pleasure of interviewing Doug McNish, Executive Chef of Raw Aura restaurant for a future podcast and asked him what his healthy version of mac and cheese would be. It sounded a lot like what I have created here for you.

Was I the last to know that edamame grow locally? I don’t ever remember seeing them at markets before and suddenly I see edamame and okra everywhere. Living alone, I sometimes have really odd meals and I can tell you with only a touch of shame and sprinkle of embarrassment I ate a massive plate of edamame for dinner.

Packing awesome lunches is no easy task- whether it be for school, for work or for airplanes.
Eating healthy when you are out of your own kitchen can be challenging and eating healthfully while travelling can be right near impossible. My mother got herself on the “harass-a-plenty” list when she failed to declare her apple at security when going into the States which is really just dumb because you can buy an apple as soon as you cross security that you can take onto the plane with you.

This was my fast food dinner tonight. Thought I would share because it was so awesome and so easy. So creamy and also so healthy. Past is a real treat for me- but I will only eat it when the vegetables over-rule the pasta by at least 3 to 1.
I had been thinking about this pasta dish for a while but it finally cooled off enough outside for me to turn my over on. This was creamy and amazing. And since I’m talking fast food here- I’ll keep this short and get straight to the cream-free creamy fettuccine alfredo. Prep time: 10 mins. Cook time, about 8 mins. Dinner in under 20 minutes! That’s fast food to me.

For someone who lives on fast food and beer, a Green Smoothie Cleanse would probably be torturous… for the first time. It might still be rough the second and third time too. But things would start to change. That garbage food would stop tasting very good. He might even start to notice how his energy levels are affected when he eats whole food versus unprocessed food. He might notice his skin look clearer, his eyes get brighter, his bathroom habits become more… um… regular. He might wake-up before noon and (gasp) want to be active!

I was not at all surprised a few weeks back when I wrote about my preferred sunscreen, that there were many extreme opinions on the matter. Actually, most opinions, I think were drastically against me on this and I am a-okay with that. I don’t mind the aggression really, better than indifference if you ask me.
