As a natural foods chef, I spend most of my day creating menus and cooking healthy meals for my clients and their families. All of my meals are whole foods based, local as possible and often all-organic. But by the looks of the dinner parties, cocktail soirees and celebratory brunches I put on weekly, you’d hardly know the food I serve is all-natural, or heaven forbid- healthy. Because you see, although my clients are often already on the healthy train (or well on their way, by hiring me!) their guests often are not. It’s my job to create a menu that will satisfy even the pickiest of eaters, and impress even the most hardcore fast food addicts of the bunch. So when Meghan asked me to do some posts on healthy entertaining, I agreed without hesitation- this is my area of expertise. My goal is to show you how to impress your guests with healthy food- no arguments or wrinkled noses in sight.

We are now officially at the halfway mark of my 10 week cooking program and I must say that having 12 amazing people come by the kitchen once a week to learn, create, cook and dine together is surely the second best part of my job (you know retreats will always take first!). If you have used any of my recipes, you know that they are not always as descriptive as perhaps they should be. I sure learned this lesson in editing my cookbook. Personally, I think that’s what makes them extra super amazingly special. Maybe it’s that I am a Montessori kid and was a given a little freedom in how my edutainment learning was gonna go. All I know is that I have one rule in my kitchen when it comes to cooking. Read the recipe, understand the recipe, then own the recipe.

Happy Monday sunshine and sparkles! I am bursting at the seems to tell you all about the field trip I took with Lisa Borden to visit a major supermarket’s ‘health’ event. But alas- I am off, off and away this week and so that kind of goodness must wait.
Today, I will share the most amazing porridge there ever was. Our beloved intern Sondi “Please Don’t Leave Us” Bruner, cooked this up for us last week in honour of the Gluten-Free Cleanse. Sondi had asked me, in her sweet way, if I’d ever had a buckwheat porridge before. I hadn’t. Mainly because 1) I hadn’t thought of it and 2) I rarely have cooked breakfasts these days (juices and smoothies are my flavours of choice). The sound of it though- a coconut buckwheat porridge warmed me right down to my its and bits way deep inside my coldest toes. In other words, I was all set to be the taster.

I feel like perhaps I am supposed to be embarrassed to tell you that I LOVE Gordon Ramsay’s Kitchen Nightmares. I am not sure why. After a day of sunshine and rainbows in the kitchen, where 99.5% of the people who call, or write, or come play in the kitchen are delightful, there is something super fun about kicking back to a flood of F-bombs from old chef GR. What’s even more ridiculous about this affection I have for this show is that I don’t even have a TV. That means the man has to go hunting for an online version and we huddle together on the sofa to watch it on the micro computer screen. Yep. I’ve hit it big time for sure. Just wait ’till my episode of Cribs (yes, I used to watch that too). A wild Thursday night watching a crappy British TV show full of cloudy weather and F-bombs on a computer.

We’ve had loads of interns and extra special helpers pass through this here fair kitchen of ours over the last three years. What I have come to discover is that each and everyone is special in her own unique way (yes, they have all been women). They each have their own area of expertise and interest and all seem to develop a fixation on a certain thing. I feel sad to say that I passed along my secret crush on rice cakes to Jill. I hear her crunching all the time even though we all know they should be just a once in a while thing.

Aside from my father, who’s throat has the potential to close allergic reaction style at the mere sight of a banana, is there anyone who doesn’t love a good loaf of BB?

While I was travelling in Africa six or seven lifetimes ago and staying with my friend Matt, we had this brain wave to make some banana bread. Within 26 seconds we were in the back of a taxi, going to a local ‘supermarket’ to find all we needed to make the perfect banana bread.
