December 1st. That be today. That also be the time my eyeballs are desperate for some sweet sunshine and my skin longs for some fresh from the UV vitamin D. So that is just what I am off chasing. Yep- picked up today with the fam in tow and we are headed to warmer locales for a sweet little getaway.
Now, I know what you’re thinking. You’re thinking, “But Meghan! You’re going to St. Lucia for a month in seven weeks”. And true. Very true. But hey mamasitas and papasitos, we create our lives and this is the one I created. St. Lucia is part of my job, it’s my version of work. Whoever said that W-O-R-K doesn’t spell F-U-N clearly hadn’t tried this job on for size. (It was my mom by the way and she is joining the February retreat for the second year in a row and she is eating her words with a fork and spoon!)

Oooowwwwweeeee it’s getting chills magills out there. Remember earlier in the week when I said how much I loved fall? Another reason why I love it is that it is the time I plan for my Winter escapes. Now, I began thinking about this earlier than usual, for one, because many of you are coming with me and two, because I was just at a super powered, superfood inspired weekend.

Apparently my sweet healthy ladies (and one or two men who read me), you are all over the single pot meals. Who could blame you though really? What is better than throwing a whole heap of stuff into a pot, taking a good thirty minutes to take a bath, paint your nails, breathe through a few rounds of vinyasa, have a quiet contest with the people you share your house with, or even take a little cat-napper and come back to the kitchen to find dinner ready and only one pot (plus a bowl should you choose to use one) to wash? Nothing! Nothing is better than one pot meals.
