There is more bacteria in and on our body, than human cells. We are outnumbered ten to one. You might even say that we are more bacteria than human. The implications of this are becoming more and more evident. Bacteria influence our health in hundreds of ways. Everyday there are new discoveries on how these microorganisms interact with human physiology. The benefits of consuming probiotics (“pro” meaning “for”, “biotic” meaning “life”) are truly abundant. However, the cultured foods that are available are usually of the lowest quality and advertised to consumers through clever marketing. An example of one of these products is Activia yoghurt by Danone.

You know the annoying drill: staring at the ceiling, tossing from side to side, glancing at your alarm clock as the hours tick away without the relief of sweet, sweet slumber. You’re not alone, my friends. Not only are sleep problems one of the top issues we hear about in the kitchen, but they’re also a problem for over three million Canadians. Lack of sleep is more than just a nightly annoyance – it can seriously affect both our short-term and long-term health. Sleep is a time when our bodies relax, repair and regenerate, and if that isn’t occurring we become susceptible to a wide array of health issues including weight gain, immune system weakness, headaches and memory problems. A recent study also shows evidence that sleeping too little can put us at an increased risk of stroke, heart attack and heart failure.

I get loads upon loads of questions from amazingly excited people about to embark on their career in the health or creative field, seeking tips and tricks on how I manifested this wee little biz of mine.
Now this may not seem like a health related question, but it is. It really, really is. Remember that video I shared last week- about the missing link in the secret of health?
On May 1st, in a little over two weeks time, my business, Meghan Telpner Inc., will be turning 4 years old! That is pretty freaking exciting, especially since, when I started this here little blog and cooking school, which were both teeny, tiny- I hadn’t a clue where I wanted it all to go. I just kept working, envisioning, working more, being brave, being creative a lot of the time and smart some of the time.
The result is that in four short years- I’ve taught more cooking classes than I can count, had over 2,000 people attend one of my classes or public cooking events, sold out 4 retreats with the 5th on its way (just 3 spots left!), been a regular writer for a national newspaper, and a regular on national television, and most recently signed my first book deal (and then wrote, shot, edited, edited some more the best book there ever was) that will have Canadian and US disribution. Plus I have a few very special signature products.

There are all kinds of rules that go along with celebrating Passover- what we can and can’t eat, what we should and shouldn’t eat and all that jazz. I was never one to play by the rules and one thing Passover can no longer take away from me is my chocolate. See- the chocolate deprivation association with Passover dates back about 28 or so years. As wee little kiddlet, living in Winnipeg, Passover was a serious affair. With my grandma being one of 7 siblings- the offspring of that was massive. By the age of 10, our Passover dinners numbered in the 80s and we held them in one of the Banquet rooms at the Westin Hotel- passing around a microphone to read from the book and sing our songs.

Happy Easter, peeeps! How is the long weekend treating you, my loves? Well, I hope. I am busy making the final edits on my book- but I am happy to say this weekend hasn’t all been punctuation and grammar. I’ve enjoyed some lovely time with family and friends too. With Passover behind us, and Easter on it’s way out- it hit me just how quickly 2012 is flying by. A pretty good year, thus far, if I do say so myself. I have been having SO much fun with my CNE students, plus all the other wonderful people coming through my doors. I wish I could host the largest workshop ever, and have each and every one of you in the audience…I’ll make that a goal for 2013.

Make It From Scratch. Is there really any other way? At this point- five years in to cooking my heart out, the thought of buying jarred pasta sauce or canned brown rice and lentils is just plain silly. Cookies? Crackers? They are so much better home made. The fundamental importance of making it from scratch is that it will ensure that to the very best of your ability you know exactly what is going into the food you are eating. Yes- you can buy your crackers and you granola bars- but then you really don’t know how much sugar, soy flour and other questionable are going into. And I don’t know about you- but if I’m indulging in sweet and fattening treats, I don’t want that sweet and fat hidden- I want to know about it!

Teaching At Loblaws! You Coming?

There is nothing more amazing to me than when you challenge a great big company, and they actually step forward and answer. LOVE that! And I haven’t had much luck- still no word from Chef Boyardee, Baskin Robbins, Pop Chips, or McCain. Loblaws Carlton, however, have proven themselves awesome! A couple weeks ago I had my first job interview in years. Yes, with Loblaws. And now, it’s my chance to prove myself awesome. In response to the amazing call out we had with all my friends and faves on Twitter- over 150 people shouted out “Hey @LoblawsCarlton- we want @meghantelpner in your kitchen!” And that very same day, they emailed me wanting to chat. I had a great conversation with the class coordinator who agreed to have me come in for an ‘audition’ style class. And it’s coming up!

I’ve been there. I am sure you have been too at one point or another. You know- where you feel like you’re doing everything right, everything according to plan and yet you still don’t feel well. You eat all the right foods, do everything your doctor or natural health care rock star suggests and still it seems like it is all continuing to unravel. As a health cheer leader, I am forever telling my own story and offering guidance for others. Sometimes, I need to hear it too- my words but in someone else’s voice.

Happy Monday homegirls and lads,Raw Oreo’s anyone???
I made these in honour of making great things (Why do we need reasons? Make up your own!) The idea came from an amazing treat my main man and I enjoyed when we rocked it raw in the woods with David Wolfe oh so many moons ago. This was similar a treat we served- though they called them pancakes. I am digging them as raw oreos.
