As I may have mentioned before, I taught 19 classes in a little over two months. Some of those classes get repeated and you know what? I don’t really like doing the same things twice. The recipe below was from a sweet treat recipe I often use in my Veggie Transition Workshop.
I am on holidays so here’s all you need to know: It has walnuts. It has dates. It has coconut oil. It has raisins. It has ground sesame seeds. And it has chocolate. Fool proof and amazingly delicious.
Enjoy!
Walnut Fudge
1 cup walnuts
1⁄2 cup sesame seeds, ground or 1/2 cup tahini
11⁄2 cups pitted dates
11⁄2 cups raisins
1/4 cup coconut oil
1/2 cup cocoa or raw cacao
1/8 tsp salt
- Pulse all ingredients in food processor until mixture holds together when pressed.
- Press mixture into 9 inch square pan, and chill.
- Cut into squares to serve.

Just discovered a super quick, super easy treat. Slice open a large Medjool date, remove the pit, add a walnut half. Tastes a lot like a date square. Yummy.

i make vegan fudge and also raw vegan brownies…the recipes resemble each other. But this recipe of yours reminds me of my raw vegan brownies. I dont use coconut oil and use added agave
b/c I like them sweeter than just dates alone…but gosh, these look great!

Care to share your raw brownie recipe?
Raw Vegan Brownie:
1 cup walnuts
1 cup dates
1/4 cup extra dark cocoa powder
process in a food processor and press into pan
Icing:
2 avocados
1/4 to 1/3 cup agave nectar depending on sweetness
1/4 cup extra dark cocoa powder
2 tablespoons coconut oil
1 tablespoon vanilla extract
pinch of salt
blend together and spread on top of brownies freeze until set.
