I wanted to share with you some of my fave blood sugar balancing, super energizing recipes from some of my fave sites from around the web.

Chocolate Pumpkin Pôts De Crème
The key to perfect pôts de crème is to mix the custard in a blender. Even though the pumpkin is already puréed, the blender smooths out the dessert just that much more to create a truly light-as-air treat. Get the full recipe!
Ice-Cream Free Apple Sundae
(Serves 1)
Image from World’s Healthiest Foods which is where this recipe inspiration came from. This is a great way to start the day or end a meal!
Ingredients:
1 apple
1 Tbs hazelnut, cashew, sunflower or almond butter
1 Tbs raw honey
1/2 tsp almond extract or almond, vanilla or tangerine essential oil
1 Tbs chopped almonds (lightly toasted is nice)
1-2 Tbs dried coconut
- Mix together the nut/seed butter, honey, and extract. It should be smooth.
- Cut the apples (with the high fibre peel) into cubes and place in your fave dessert bowl
- Drizzle the ‘caramel’ sauce over the apples and sprinkle with toasted almonds and coconut.

Grilled Brocolli
From Elana’s Pantry
2 heads broccoli
2 tablespoons olive oil
½ teaspoon celtic sea salt
- Wash and cut broccoli into smallish pieces with long stems
- Toss broccoli in a large bowl with olive oil and salt
- Place on grill over medium heat
- Cook for 3-5 on each side until tender
- Serve
