My ideal dinner is a robust vegetable soup with a slice of homemade sprouted grain bread — not exactly the kind of meal most people want to be cooking in humid, 40 degree weather. But I’m not most people; I’ll do just about anything for a bowl of soup.
So I put my cravings of steaming bowls of comfort food aside to come up with a delicious raw recipe that’s easy to make, healthy, and won’t turn your kitchen into a sauna: Rosemary Sea Salt Bikini Bars.
This recipe was inspired by my recent summer hike up Mount Lafayette in New Hampshire’s White Mountains, accessible only by foot at 1,600m above sea level.
In a region known for the world’s worst weather it is important to be prepared so I had my backpack filled with extra clothing layers, matches, water, and these delicious bars. They are non-perishable and high energy snacks ideal for toting along on a 3 hour hike.
Unfortunately the Rosemary Sea Salt Bikini Bars never made it up the mountain. In fact they were gone before we hit the trailhead — they’re that delicious. But that’s okay, because when we finally made it up to the Greenleaf Hut at the summit, there was a hearty bowl of soup waiting for me.
Rosemary Sea Salt Bikini Bars
1-1/3 c. chopped honey dates
1/3 c. raw almonds
1 scant c. dried cranberries
1 sprig of rosemary
a dash of sea salt
In a food processor, combine all ingredients until the nuts are just chopped and the mixture comes together. With wet hands form into a bar shapes. Wrap individually and refrigerate to firm them up. (Makes 6)
