You know what I love? Right, that’s like answering do you know how many blenders went whirring this morning to make all of you breakfast.

What I love today, and what I have loved before, is when the student becomes the teacher.

Lindsay is the blogstress behind the always inspiring Kitchen Operas (and how awesome is it that she is actually an opera singer!). She is also an inspired kitchen creator, past attendee at a few of my classes and workshops and delightfully supportive of what I do. In turn, I am forever impressed with her ability to make her own pita bread that actually splits down the middle!

I am working on Lindsey to become my teacher and teach me the ways of baking with yeast. There’s a good chance my bottom may expand in direct relation to an increase in baking skills but it would totally be worth it. That’s what stretchy pants are for.

I digress. Lindsay had offered me this smoothie recipe for the new Green Smoothie tutorial and I completely forgot!

The reason I loved this recipe so much is that I hadn’t the foggiest idea what Pea Greens were.

They’re the greens that come off pea plants. Usually sold at markets- best to get them fresh as they don’t last too long once picked. They are very common in Asian cooking, not so much in mine. But they will be! Oh they will be.

So I will now pass the keyboard over to Lindsey to share her delightful amazing-town Pea Greens Smoothie Recipe:

I know not everyone is in love with green (veggie) smoothies as much as I am, and that’s even a new-ish change for me since I was inspired by Meghan’s ebook of Green Smoothie recipes. But this one is really lovely and sweet, thanks to the apple, watermelon, and honey.  And it’s nice and light too for an unseasonably-hot spring.

If you haven’t gotten on the green smoothie train yet, you may want to start by just adding a leaf or two of your favourite greens (spinach? kale?) to your regular fruit smoothie.  I promise, you won’t even notice it.

But when you’re ready, give this one a go.  It’s divine.

Springy Pea Green Smoothie

Prep Time: 5 minutes

Cook Time: None

Ingredients (Serves 1)

  • 1 big handful pea greens
  • 1 big handful broccoli sprouts
  • 1 apple, cored and cut into quarters
  • 1/2 c. watermelon cubes
  • 1/2 tsp. spirulina
  • 1 big pinch cayenne
  • 1 tsp. raw honey
  • 2 tsp. almond butter
  • 1 1/2 c. water
  • 1/2 c. ice cubes
  • 2 tsp. chia seeds

Instructions

Add all ingredients to blender and blend away for at least a minute. Feel virtuous that you’re getting your greens in your breakfast.

    Sweet! Make that sweet, pea! I have them growing in my garden, but they were pretty unsuccessful this year, we may just get as little as one sweet pea per family member (5)…. but I’m pumped now that I know I can get a few smoothies out of the whole fiasco!
