Yes, flaxseeds made the cut to fall into the Everyday Superfoods category in the brand shiny new tutorial coming out tomorrow. Why did they make the cut? Because they are awesome-town worthy.

Not only are flaxseeds incredibly rich in omega 3 essential fatty acids, the oil has a phytoestrogen effect that can help us balance out the old cycle, they are very rich in fibre, plus they have that boogery mucilage component to them. As with okra and aloe, that slime factor is incredibly nourishing to the cells that line our intestinal tract. They feed these cells and the better nourished these cells are, the better they are able to absorb the nutrients from our food, thus the better nourished we are as a whole.  The mucilage in flaxseeds is also delightfully healing to any gut irritation or inflammation. It therefore makes for a very gentle fibre as the combo of the soluble and insoluble fibre plus the snot-like mucilage helps it all slip right on out efficiently and regularly.

Now, as I mentioned in my video, this mucilagenous goo also makes flax a great replacer for eggs, when the purpose of the eggs is to bind the food together like in the case of pancakes, cookies, falafel, veggie burgers etc. But don’t go thinking some ground flax and water is going to cut it as an egg replacer in anomelet. Now, now- that’s just silly

This tortilla is incredibly easy to make. Only trick, as with all raw cracker type goods is it takes some prep and drying time. But once you make up a batch, you have them for a while and they are so multi-functional. Incidentally, they are also kosher for passover and a perfect antidote to all that constipating Matzoh.

So I suppose that in my excitement over tomorrow’s tutorial release, you lucky ducky’s get two, TWO recipes today.

Egg Replacer
1 Tbs ground flax
1/4 cup water

  • Blend together and let sit for 15-20 minutes- then mix in to dish as you would an egg

Live Flax Tortilla
1 cup whole flaxseeds, soaked 6-8 hours
1/2 avocado
seasoning of choice (this is a great one for mixing in fresh herbs!)
sea salt to taste

  • Pour flax seeds into a strainer to allow any excess water to drain away. You might also consider saving this excess water, warming and using as a soothing laxative tea. Do not rinse the flax seeds. They will still be thick with goo, that is a-okay.
  • Combine flaxseeds and avocado in vita-mix blender or food processor with herbs and spices of choice
  • Blend until smooth
  • Carefully and evenly spread the mixture out on a teflex sheet for your food dehydrator or a parchment paper lined cookie sheet
  • Place in dehydrator for 2 hours at about 130 F
  • Oven method: place in oven for 1.5 hours on lowest setting- keep checking.
  • After about 2 hours, remove from over/dehydrator and flip over. Remove teflex sheet with dehydrator method
  • Dry for another 1-2 hours or until full dry to the touch
  • They will be crunchy at first but soften over time.

Note- for the oven method, it might be helpful to keep your oven door slightly open and just keep checking your first time around. Different ovens have different strengths.

    Aha! Thanks for the trick about letting the flax egg replacer rest for a while– perhaps it will be even more effective in my baking now. Perhaps I will own a food dehydrator one day, and then I will make tortillas… and so many other yummy raw foods!

    oh, and I’ve heard that flax goo can be used as a hair gel for those days when you want your hair to be super, too ;)

    My son is allergic to latex so we can’t use the avocado. Is there something else that you could recommend to try in place if it?

    • I haven’t a clue about a connection between latex and avocados- care to fill me in. I think you may have to just pass on this recipe. Not much you can do to sub a main ingredient in this case as the properties of the flax are what make it work.
