It’s that time again my sweet mood stable, sweet-tooth-in-check readers. We are going 5 Days Low Glycemic Eating starting March 21st. Are you in? I saaaaaaaaid, Are you in?!?!?!
There are a few things I want to share with you before you make your decision. The first is this feedback I received from peeps who have been using my tutorials with delicious success:
Hi Meghan,
I wanted to write you a quick note because two of your guides (5day vegan and 5day low glycemic) have proven invaluable yet again. My mom developed diabetes recently, and unfortunately found out about it as a result of experiencing deterioration in her vision. She never had a sweet tooth, does not drink alcohol, is not obese etc, so this came as a shock. I realized I had your guides on my trusty USB drive. I printed them out and we went over them together - they were super useful. The low-glycemic lists were particularly helpful to her. She’s trying a low-glycemic near-vegan diet and she’s already been able to cut her insulin down by 25% in just three weeks, and her blood sugar is holding very steady and staying on the lower end of the range her doctor recommended. Her doctor is thrilled and very supportive and already saying that pretty soon she can switch medications and not have to take insulin on a daily basis. And most importantly, she says she feels better.

The challenge helped solidify my belief in whole foods. You articulated it perfectly when you said, “You don’t have to read a food label on a carrot”… I was concerned that I would be hungry, and I was so pleased that every meal and snack was satisfying and filling. I played around with the recipes a bit, but given the strong foundation I started with (your e-tutorial), I had a lot of room to play! I guess one of the biggest differences with this kind of eating is that I feel satiated, but not overly full. I also discovered I had much more energy, and I also had the desire to move… I wanted to get up and do things! Improvement feels possible now.

I am definitely in again! And you’re not kidding about the Adrenaline Lunch pairing well with the Low-GI tutorial. It has really stuck with me and I’ve become really conscious of foods that could spike my blood sugar. In particular, a few weeks ago I had to write a 3 hour exam that spanned a lunch hour – your advice helped me plan to eat ahead so that I could keep from crashing half way through. I’m always so amazed how easily I can apply your advice to my every day life!

I’ve come to the conclusion that although I’ve cut down 95% of my refined sugar intake over the last month, I still depend a lot on sweets (via honey, maple syrup and fruits). And although that’s not “bad”, I think this challenge will stretch me to a place I haven’t ever gone… and for that reason, I’m in.
This challenge is just what I need. I’ve done a lot since the new year to change my eating habits for the better but have slipped back a bit when my aunt died recently and since then I’ve been struggling with sugar and caffeine cravings. I’ve made some progress, but I think this challenge will get me properly back on track!
