I love acorn and butternut squash! But for how MUCH I love them, I certainly don't eat them enough (like 1-2 times a year). You just inspired me to try your recipe and maby start making this as a staple around here all winter long!

Well, now, I quite literally just finished eating a bowl of Thai-spiced acorn squash coconut soup for lunch. I, too, am just learning how to eat them. Surprise, surprise, they are edible!

You are wonderful! I love squash and I, too, was just wondering what to do with the cabbage I have in the fridge! Can't wait to try this. :)

Also, this will be my first Thanksgiving as a vegetarian so I'm looking for veg-friendly options to indoctrinate my omnivorous family with. This could be a great one! Keep those turkeys gobbling ... I don't need to eat them!

I love that you added cabbage! Man, I have had a cruciferous craving lately ... I think my veggie clock is now set on winter.

Don't forget kabocha. I have a kabocha recipe I am posting this week. I think you might like it :)
