Apple halvesNothing says apple quite like autumn.

Wait! Did I get that backwards. Nope. No I sure didn’t. It’s true. In Canada, autumn and apples go hand-in-hand. Hand-in hand like ginger and hazelnuts, like sesame seeds and pomegranates, like flaxseed and blueberries, like cranberries and almonds, like pumpkin seeds and raisins and like apples and oats.

Huh? Have a I lost you yet?

Well, as I mentioned, I have a contest announcement to announcify today. As you know, I am a big proponent of whole foods. When I met the lovely peeps from Taste Of Nature and introduced myself, I mentioned my site and that I heart their bars and they sent over a generous helping so I could share the Taste of Nature love. Why do I love these bars more than most? Because they are made with food. You can even recognize food in the bars like almonds, and raisins plus, they have fun names like Caribbean Ginger Island and Chilean Blueberry Fields that kind of make me want to pack up these organic bars and head to these delightful destinations (the bars make great travelling foods).

In honour of autumn and apples, I am tying this contest in with my desire to get some great new appley recipes into my repertoire, not to mention that Taste of Nature has a Niagara Apple Country bar and Niagara Apple Country is just a couple hours from where I live.

I am going to share with you my favourite, easy apple recipe and one of the ways to enter the contest, is to share yours with me. Contest deets are at the bottom. For now, delight in this little apple number.

Just Apples Appley Apple Butter
8 apples, cored and quartered (leave the peel on if organic)
1 apple, cored + 1 cup water

  • Preheat oven to 400
  • Blend together the apple and water. Strain out pulp, leaving behind one delicious glass of apple juice
  • In a baking dish, lay out apples and cover with apple juice
  • Place in oven for 1 hour
  • Remove and, with a potato masher, mash the apples down into a pulp
  • Reduce oven temperature to 325
  • Put apple mush back into the other and bake for another 2 hours
  • Remove and either mash again by hand or run through a food processor for a smoother consistency. 8 apples cooked down to about two cups worth of apple butter is a pure little apple party in your mouth.

And now to enter the contest.

niagara

apples, peeled and sliced, with almond butter
or apples, peeled and sliced, a little bit of sea salt (really, i swear this is good!) everyone likes sweet and salty, right?

  2. Nicole says:

My fav thing to do with apples in the fall is make apple sauce. Peel em, slice them and simmer them in a pot with a wee bit of water and lots of cinnamon. Once soft, mash a bit and top with walnuts. I just cant get enough of this! Then there is of course apple raspberry crisp…

  3. Nicole says:

Oops, forgot to say, I sooo want to try the Chilean Blueberry Fields bar by Taste of Nature

  4. Julia says:

Caribbean Ginger Island is the flavour I most want to taste. My favourite recipe for this time of year is apple crumble. My husband has a glutein free diet, so I substitute most of the flour for oats and use some GF baking flour for the rest, brown sugar, a little butter, cinnamon spices and we are set. It may not be as healthy as most, but it sure does warm us up!

  5. Hey Hey Meghan! I love your blog and love it and you even more because my hometown is the TDot! (I’m currently schooling at the UWaterloo, but still feel the hippie love for downtown Toronto).

Anyways, my Taste of Nature bar of choice to try would be the Persian Pomegranate Garden!! (I just had pomegranate for dessert last night, so it must still be zinging in my bloodstreams)

My most recent favorite apple recipe is for the oh-so-simple crispy apple chip!!! CRUNCHY, DELICIOUS AND NUTRITIOUS. Thank goodness i posted it on my blog recently: http://bit.ly/1wkh9V (you’ll have to scroll down a bit..)

Oh yeah, and I’m following you on twitter!

    peace and apple chips,
    aletheia

  11. Jes says:

I just made apple butter the other week–nothing beats it, especially your in-the-oven time saving recipe!

  12. Wendy Briere says:

Niagara apple country, of course. Yummo.

  13. Wendy Briere says:

I have never actually tried making or eating apple butter. How do you use it?

  14. I am all with you on that Niagara Apple Bar that sounds fabulous!!

  15. I like to roast apples with a little cinnamon and agave and then use half the batch to make applesauce by adding some hot water and a little agave and pureeing in my food processor. So delicious!

    apple muffins!

and my very favorite, apple crisp! I just made pear crisp last night actually:)

  17. Deena says:

Niagara Apple Country would definitely be my favorite…my husband and I visit Niagara on the Lake at least once per year. I love that Niagara has its own regional cuisine based almost entirely on local, seasonal foods.

  18. Jody says:

    Québec Cranberry Carnival sounds good!

  19. Jody says:

Here’s my favorite apple recipe. It’s actually a juice.

    Using a Juicer

    1 apple
    1 beet
    1 inch ginger

If you don’t have a juicer but a high speed blender you can zip it up in that then strain the pulp out using a milk bag.

    Enjoy
    Jody

I’d have to go with the classic flavour of Niagara Apple Country – though it was a tough choice, as they all sound great!

I also Twittered about the contest.

  21. Teresa says:

I’d like to try the California Almond Valley. Right now everyone seems crazy for Honeycrisp apples, and while I do enjoy that variety, I’m loving the poor neglected Arkansas Black. I just can’t resist an apple with such an intriguing color! My favorite recipe with apples? Let’s see, you take an apple, cut a slice, pop into your mouth and eat. Step 2- repeat!

  22. Claire says:

It would have to be the Niagara Apple Country – there is just no combination quite like apple and cinnamon. I work at a festival in the summer and the one thing that i just have to do every year is go to the Tiny Tea Tent and have a cup of apple and cinnamon tea – it’s the best

  23. Stephanie says:

not really a recipe so much as a list of ingredients…last week I had sprouted buckwheat mixed with agave, chopped apples, chopped walnuts, and a dash of cinnamon for breakfast. other folks added yogurt. I know you can dehydrate this and make grawnola, but i like it without the hassle.

  24. Ellena says:

Carribean Ginger Island…I can so use a carribean get away!

Oh my favorite recipe used to be an apple crisp I started making for my now husband when we were both in college. Straight to his heart (and his tumm;) He still requests it but knows he is most likely going to get a raw version.

    My fav recipe now:

1 slice of French Meadow Bakery Organic European Sourdough Rye Bread (GF too!)

    Spread with Raw Almond Butter

    Top with chunks of apple

    Sprinkle with Goji Berries

YUMMO. Dont know why I put these ingredients together in the first place but sooooo goood!

  25. Catherine says:

Quebec Cranberry Carnival please! I have always wanted to travel to Canada and a cranberry carnival in Quebec sounds like a nice place to start!

Thank you for the apple butter recipe!

  26. Meg says:

I already have a subscription to your blog!

  27. Roxanne says:

Québec Cranberry Carnival because I live in Québec and because i LOVE cranberries!

  28. That sounds great! I just found your blog by the way and am enjoying reading it!

  29. Hi Meghan,

I would love to try Québec Cranberry Carnival, because I love Quebec, cranberries, and carnivals! However, any of them would be a great treat for me!

My favorite apple recipe isn’t a link or really even a recipe I love to cut an apple into cubes and sprinkle it with cinnamon and maybe a drizzle of raw honey or maple syrup. Sometimes I add a dip of natural pb mixed with plain Greek Yogurt. YUM!

  33. Julia says:

I would like to try the California Almond Valley bar, they look super tasty! My apple recipe is that I add apple pieces to GF waffles & pancakes. My boys don’t like pies these are our apple treats!
