I don’t know, Meghan. I’m a health conscious individual, but even I would hesitate to take an apple from a complete stranger. Does the even stepmother from Sleeping Beauty ring a bell? LOL.
Meghan, I’ve been reading the blog for a while now but for some reason never watched the videos – I LOVE them…. it’s nice to SEE that things like sprouting and saurkraut are so much easier than I would’ve thought. I think I will try those two soon – not only healthy food but great projects for my 4-year-old daughter and I to do together! I also love the strawberry butter one – making eating changes is intimidating, especially if everything is perfect all the time – it’s good to know that even super-healthy-eating nutritionists have semi-icky produce lying around.
Wow, so much to watch! I think that veggie prepping video is first on my list!
Why is it that I never thought to keep my lettuce/kale/chard/herbs upright in a jar of water?! I am off to prep my veggies. Yay for efficiency! ^_^
PS. I think I’ll try sprouting, too. I bet my kids would love to help.

Question: what’s with the kale on the fridge door?
I recently told my mother-in-law that I like sprouts, and she asked if I grew them myself. I kind of scoffed because I’m horrible at keeping plants alive. But I’m certainly going to try it now that I know how easy (and inexpensive! huge plus!) it is.
Thank you so much for the veggie prepping video as well as the tour of your kitchen, my husband and I find them both really inspiring! I’d love to eat more vegetables and cut back on meat portions and these peeks into your world are a great place for me to start. Keep up the great posts!
Meghan, you were giving away apples in the financial district. Free stuff goes against everything the suits stand for. No wonder they weren’t smiling. Silly suits. I’m sure they didn’t know what to think of you! It must have seemed like a bright, cheerful alien had landed in their midst. I wonder what their reaction would have been if you had been selling apples for $5 each…

I’ve been intimidated by the real coconuts ( in other words the hairy things and not the packeted shreds ! ) and seeing you struggle has made me feel better about it and myself. However, you did look to struggle a little bit. Would an electric drill do the job or is there a good reason to stick with a hammer and nails.? I’m still a bit apprehensive ! ( I am a bit of a big girls blouse, I know ! I had one in the vegetable drawer for ages but couldn’t bring myself to attack it.Don’t ask why – some mental block I suppose. )
My other quiestion is about preparing veggies in advance. I feel a little silly asking, but here goes. Do they lose any more nutrients in their cleaned and chopped state than they would if they hung around in the bottom of the fridge whole ? As I ask I’m saying to myself maybe not, but it’s what has stopped me doing it in the past. But the thought of preparing them ahead is a fantastic idea as the thing I miss most in following my healthy diet is the convenience of convenience foods !! I look at the prepared and bagged vegetables in the supermarket and think there can’t be any goodness left in them. Am I mistaken and making life extra difficult for myself ?

Jill- If you are cool with a drill- go for it. Not my cup of tea. Though in the furry coconuts, the water you get out is limited. You could easily just skip that pit and crack it open on the sidewalk. As for the chopping of veggies- I have never heard about nutrient losses when you do them yourself. I think what’s worse is when they don’t get eaten at all- then you are really losing nutrients. The bags at the stores should not really be an option as they do use some preservatives on them once they are cut up. So do it yourself, eat it at that week and you are good to go.
