I just made this beautiful pesto as well, and didn't miss parmesan cheese at all! I didn't have a zuke, but it still turned out beautifully.

I am going to try and make this raw next time I pick up some peppers, I bet it's delish.

I guess all I have to do now is sweet talk my basil plant into over-producing over these next few weeks.

Pesto problem? Oh I am working on it. ;)

OH MY GOODNESS! I just made this recipe and I had to post right away! This was awesome! I didnt have pine nuts so I used what I had left of my cashews and walnuts. It was so creamy and delicious. It turned out really sweet which was totally okay with me but other people might want to make it more savory. oh and instead of the zuchini I used mushrooms yum!
