This video might just be the most ridiculous yet. As a coconut fan, you’d think I would have learned how to crack on open with grace and dignity by now. But no. Not to be. My machete was in the shop so I took to the streets to crack this coconut open. Watch and giggle at my expense.

I promise, this will be the last coconut related post for a while. I just had to cover all coconut bases. I have talked about the coconut water, and I talked about the coconut oil, even gave you a recipe for coconut milk ice cream but an actual coconut had not yet made an appearance.

I am pretty sure I love coconuts so much because they are a symbol of the Caribbean and the tropics and holidays. And when I woke up this morning, in APRIL, and saw snow on the ground, I immediately longed for some fresh coconut and to have my feet in the sand.

As I gear up for the Green Smoothie Cleanse, I thought it would be good to have coconut on hand, as I love how it makes my smoothies a little sweet and oh so creamy. Coconut based desserts also happen to make an appearance on Passover which begins tonight.

Here is my Passover,Easter and any old time friendly Coconut Macaroon Recipe.

Coconut Macaroons

1 1/2 Tbs arrowroot or potato starch
1/2 cup rice or almond milk (or soy if you like)
2 Tbs coconut oil (of course)- cold pressed extra virgin
1/3 cup maple syrup
3 cups shredded coconut (dried or fresh)
2 tsp vanilla extract

  • Preheat oven to 300
  • Shake up starch and milk in a jar with a lid until well combined and pour into a tall saucepan
  • Add the coconut oil and maple syrup- heat up these liquid ingredients until well combined and thickened
  • Slowly add in the coconut and vanilla extract
  • Spoon out the mixture onto a greased or parchment paper lined cookie sheet, shaping mixture into little macaroons
  • Bake at 300 for 15-20 minutes until the tips are lightly browned.

    Great video! You had me cracking up. I love coconuts too, and especially coconut macaroons! I’ve heard coconut is great for IBD. Young thai coconuts are wonderful as well, I make my husband cut them open with a knife. It’s a lot of work!

    OK, silly question time. I’ve drilled, drained and cracked a fresh coconut before, but I had no luck peeling it. How did you do it? I ended up trying to scrape the coconut from the shell with my teeth. Coconut shell is really dry….

    This works amazingly well on the young coconuts, not sure if it works the same for the brown ones.

    I will get you a coconut opener from Brazil! My sister is coming to visit and I’ll make her bring you one – and another for me now that I think of it. It opens a whole for the water to come out – much nicer than a nail + hammer. Then, you can crack the shell open with a big knife…. at least that’s how they do it…

  20. Laurie- you made me laugh! The coconut seemed to just pop away from the shell and then I used a veggie peeler to get the thing layer off. My teeth stayed nice and safe in my mouth.
