Tossing Salad

For whatever reason, people equate healthy eating with a lot of lettuce- as if any sort of healthy eating regime is going to involve a world of salads. Well, perhaps the reason  for this perception is because it is true. The misconception however is the definition of a salad. It is true that a healthy eating plan will involve a whole lot of vegetables, but I have never once put someone on a diet that involved iceburg lettuce salads accompanied by some carrot sticks and celery with a drizzle of some nasty crappy oil vinaigrette.

A salad can be almost anything, as far as I’m concerned, as long as it is sitting on a bed of chlorophyll rich greens. The greens I am talking about are romaine, arugula, baby greens, spinach, an herbal blend- the really green ones. And what do we put on top? How about some protein? How about looking in the fridge and seeing what is leftover from dinner yesterday? Throw on some grilled fish, some roasted veggies, some beans, steamed greens, or even a handful of mixed nuts. You might add in a few slices of fruit, or perhaps boiled eggs or even a spoonful or two of your favourite whole grain (I like quinoa on my salad).

I tend to top my salads with some fresh lemon juice and flax oil but try out some different oils- almond, hemp, walnut or some regular extra virgin olive oil. Whatever works for you. Sprinkle on some salt and pepper if you like, perhaps some fresh grated ginger or even a dash of curry powder and you have an incredibly healthy lunch or dinner in under five minutes. Eezy peezy lemon squeezy.

  2. Couldn’t agree more with you on this. This is my everyday ritual in the morning when i prepare a salad for my lunch. The garnishing and taste inputs on the salad depend on my mood and feelings at that moment of time – what kind of taste would i like :)
