Is there really anything sweeter than the ooey gooey delicousness of apples and cinnamon baking in the oven? The theme of a recent cooking party I hosted was healthy comfort food and the dessert we cooked up was baked apples. They are crazy simple, require the littlest bit of prep time and are so warming, healthful and yummy in the tummy.
The sweet scent of cinnamon in grounding and just comforting. The temperature of our food has an impact on how we feel and our health. This does not necessarily refer to the actual physical temperature but on the effect it has in our bodies. Warming foods help to generate heat in the body, and this warmth often lends to a sense of comfort and ease. Cinnamon is a warming spice and combining that with some high protein and essential fat containing walnuts, sweet chewy raisins, a pinch of nutmeg, decadent honey and the mushy warmth of cooked apple and we have a warm hug in a bowl.
Baked Apples
Recipe for 1 Apple
1 apple
1/2 Tbs fresh lemon juice
1/4 cup water
Filling
2 Tbs honey or maple syrup
2 Tbs raisins
2 Tbs chopped walnuts
1/4 tsp cinnamon
pinch nutmeg
Recipe for 6 Apples
6 crisp red apples
2 Tbs fresh lemon juice
1 cups water
Filling
3/4 cup honey or maple syrup
3/4 cup raisins
3/4 cup chopped walnuts
2 tsp cinnamon
pinch nutmeg
- Preheat oven to 350.
- Core apples using a melon baller leaving the bottom of apple so they hold the stuffing.
- Mix stuffing ingredients together and scoop into apples.
- Place apples in a baking dish with the lemon water in the bottom of the dish.
- Bake uncovered for about 50-60 minutes, until apples are tender.
- Serve hot.
