My friend Adam made these the other day and told me they were delicious. I thought I'd better get caught up, so I made these today. For the flour I used about 3/4 (homemade) sprouted kamut flour and about 1/4 coconut flour. Instead of honey I used dates - pulverizing them in the Vitamix with the apple + water/chia egg replacement. For the ground nuts I used 1/4 cup finely ground almonds. I had run out of cacao so I used carob plus an additional tbl of ground cacao nibs. Finally I added cacao nibs and chopped dried figs. I figured if Adam can eat 6 of these at a time, I may as well make them big, so I measured them onto the cookie sheet using my 1/4 cup measure (usually I make cookies much smaller than that). My batter was drier than yours probably was since I used the dates (unsoaked) instead of honey, and because of the coconut flour. They could have used a bit more liquid, but, yum!!

These are great. We tried your original recipe and loved it. Today we made it with 1 cup of old-fashioned rolled oats instead of flour, they were awesome. :) Loving your blog.
